I made a beautiful salad of arugula, strawberries, blueberries, star fruit and goat cheese over the weekend. When it came time to dress it, I was stuck. None of my usual dressings sounded right to me, so I decided to just dream up a new one. I wanted something really light and fresh-tasting, since the salad was mostly fruit. This ended up being just right!
Citrus Viniagrette
Ingredients
- 1/2 cup orange juice
- 2 limes juiced
- 2 T white balsamic
- 1/4 c olive oil
- Salt and Pepper
Instructions
- Combine together in a jar with a lid. Shake vigorously until emulsified.
