Summer cocktails don’t get more refreshing than these Champagne Mojitos! With fresh mint and lime juice, this mint champagne cocktail can’t be beat!
Now that the baby is here, I feel like a kid in a candy store when it comes to cocktails. I have had 40 weeks to come up with new ideas- almost none of which I tried out on my friends. It just isn’t as fun if you don’t get to join in.
Prepare for an onslaught of cocktails in the coming weeks/months.
First up is this twist on a classic-a champagne mojito. My love for mojitos is well documented, and I already have a few different versions on here (you can find them here!). They were a great virgin drink during my pregnancy, but now I finally have a chance to try out this idea. As far as mojitos go, these still fit the bill- fresh and crisp, perfect for hot days. Instead of topping the drink off with club soda, I subbed it with champagne for a slightly different flavor. Dave and I both really enjoyed these- but be careful! They are strong- no club soda to tame the rum down!

Champagne Mojitos
Ingredients
- 3 lime wedges
- 2 sprigs fresh mint
- 1/2 oz simple syrup
- 1 1/2 oz white rum
- 2 oz champagne
Instructions
- In a medium cocktail glass, add the like wedges, mint and simple syrup. Muddle together.
- Fill the glass with ice and pour in the rum. Top off with champagne and gently stir. Serve immediately.
