Being a mom of a little boy is tough. J has no regard for anything, he is just head-first diving in to everything. His current new thing is running. Not just running, but not-look-where-I-am-going-and-figure-everything-in-my-path-will-magically-get-out-of-the-way-oh-wait-why-am-I-falling running. It is nerve wracking. He ran straight into the dog the other day and then looked absolutely incredulous when he, of course, fell.
There were incidents around here on Sunday, involving falling over things. The first time was into the headboard of the bed. Tears ensued, there was a minor bloody nose, then he fell asleep on my chest 25 minutes before lunch. I figured I was already in trouble since he fell asleep an hour early, upset and hungry.
Then the Culligan man showed up and rang the doorbell at 1:30 (1 hour into nap time) on a Sunday. I let him know, in so many words, that the quickest way to get me to not buy anything from you is to ring the doorbell and screw up nap time .
He left pretty fast.
I got J up and took him outside. He was having a great time playing in his water table; I was moving a flower pot. I heard a cry and J was on his hands and knees on the patio. In a span of four seconds, I dropped the pot, ran over and picked him up. This time, it was no minor bloody nose. It was major. Blood all over his face, out of his nose, in his mouth. Awful. My heart just broke- this was my first major bloody injury as a mom! I truthfully expected teeth to be gone. After cleaning him up, it was determined that he just hit his nose AGAIN, which caused it to bleed like a stuck pig.
Needless to say, we chalked the rest of the day up to a loss. Grumpies abounded.
Usually around this time of year, I start grocery shopping with my eyes. There is so much great-looking produce in the stores, at roadside stands, in the garden. The colors, the smells, the feeling of satisfaction of ripping back a corn husk to reveal perfect rows of yellow corn kernels…ahhh.
This also leads to me forgetting that we are a family of three, not a family of eight. I overbuy.
I had a plethora of vegetables last week, so I got creative and came up with a side dish to serve alongside some filets I picked up. Don’t feel tied to this particular combination, but I have to say- it was pretty damn good.
Summer Vegetable Sauté
Ingredients
- 1 zucchini halved and sliced crosswise (into half moons)
- 1 yellow squash halved and sliced crosswise (into half moons)
- 1 clove garlic minced or pressed
- 2 ears of corn kernels stripped
- 1 to mato diced
- 1 tsp dried oregano
- Salt & freshly ground pepper
Instructions
- In a large shallow sauté pan, heat 1 tablespoon olive oil over medium heat. Add sliced squash and zucchini to pan, cook until beginning to brown. Add garlic and sauté until fragrant, 30 seconds. Add corn and cook, stirring occasionally, until warmed through and slightly softened, 2 minutes or so. Add tomato and oregano; season to taste with salt and pepper. Continue to sauté, tossing the ingredients together until fully incorporated and warm.
