Summer cocktails don’t get more refreshing than this Cucumber Collins recipe! With fresh ingredients like cucumber and basil, it’s the best cucumber tom collins!

I can’t believe I have gotten to post 29 (?) before realizing that I really ought to be adding a cocktail category. I mean, my word. What was I possibly thinking?
We went out for dinner about a month ago for a much needed date night. We settled on Bonefish, since we hadn’t been there for over a year and we’ve never had a disappointing meal there. I decided to branch out on my cocktail selection and tried a specialty seasonal cocktail- The Cucumber Collins.
One sip, and I was hooked. I nearly instantly said to D, “Holy wow. This is my summer cocktail this year. I need this recipe.” Since we had a great waiter, he happily obliged my request. I’m happy to report that they are just as good at home.
I did try doing it two different ways- infusing the gin as they do in the restaurant for 24-36 hours, and muddling the basil and cucumber in the gin, shaking, and straining. I do have to say that both of good, but the infusion pushes it over the top. Pick this stuff up tomorrow so its ready to go by Saturday night.
Tools needed to make this hendricks collins:
- In order to infuse your gin with the basil and cucumber, you should use some sort of sealed jar, like a [easyazon_link identifier=”B01NBMPHYV” locale=”US” tag=”gogogogo03-20″]mason jar[/easyazon_link].
- Another good tool to have is a [easyazon_link identifier=”B011QONIBG” locale=”US” tag=”gogogogo03-20″]martini shaker[/easyazon_link]. You will use it for lots of other cocktails, too!

Cucumber Collins
Ingredients
- 1 English seedless cucumber
- 1 bunch fresh basil
- Hendricks gin
- 2 oz Hendricks gin infused with cucumber and basil for 24-36 hours
- 1 oz St. Germain elderflower liqueur
- 1 oz fresh lemon juice
- generous splash club soda
Instructions
- Slice 1/3 of cucumber and add into large sealed jar (think a mason jar). Add a handful of fresh basil leaves (about half of store package). Pour in gin. You're done until tomorrow.
- To make your cocktail:
- Add all ingredients to a martini shaker filled with ice. Shake and pour into a martini glass or an old-fashioned glass. Garnish with a slice of cucumber. Walk outside in the warmth, sit down, and enjoy.
